SPICY SHAKSHUKA
Shakshuka (Tomato Baked Eggs)
Ingredients
3 tablespoons olive oil
1/2 cup red bell pepper, diced small
1 box pomi crush tomatoes
1 large garlic clove, minced
1 small yellow onion, diced
1/2 tsp red chili flake
1 1/2 tsp sweet Hungarian paprika
1/2 tsp ground cumin
1/4-1/2 cup feta cheese, crumbled
1/4 cup chopped cilantro
2 tablespoons scallions, sliced
4 large eggs
Instructions
Heat an 6 inch saute pan and add the olive oil.
Sautee the onions and garlic and red bell pepper on medium low heat for 5 minutes.
Add the chili flake, paprika and cumin to release the oils in the spices and cook for 3 more minutes.
Add the tomatoes to the pan and season liberally with salt and pepper. Cook for 10 minutes.
Once the sauce has simmered for 10 minutes, with the heat still on, make small wells around the pan using the back of your spoon and carefully crack the eggs separately into individual wells.
Cover and cook for 5-8 minutes or until the whites of the egg are set and the yolks still runny.
Garnish with fresh chopped cilantro, scallions and feta.
Drizzle with olive oil and serve.
